Since 2014, Eric has realized his childhood dream of becoming winegrower. Our vines are AOP Vézelay in Chardonnay and Pinot Noir now certified “Organic”.
What is biodynamic?
Trimming of the vines, soils tillage and bottling are carried out according to the lunar cycle. Energizing, spraying natural preparations and manual harvesting in small containers avoids the use of inputs. Grassing and installing hedgerows helps prevent soil erosion, preserves organic matter and biodiversity. The trellising in height and the integration of fruit trees in the rows makes it possible to protect the vine from global warming. The whites are pressed, not destemmed, put directly in stainless steel tank and the vinification of the reds is done in whole bunches and press underfoot; It aged for 8 months in the best oak barrels of the Tronçais forest.
All these cultural approaches have the following objectives:
