At the Moulin des Templiers you drink «Le Terroir Français» a light, fruity wine with the taste of red fruits, pepper or herbaceous scent with its small hint of minerality.
Since 2014, Éric has fulfilled his childhood dream of becoming a winemaker. Our vines are AOP Vézelay en Chardonnay and Pinot Noir now certified «Bio».
What is biodynamic?
Pruning of the vineyard, tillage, drawing and bottling are carried out according to the lunar cycle. Dynamisation, spraying of natural preparations and manual harvesting in small containers avoid the use of inputs.
Grassing and the installation of honey hedges help to avoid soil erosion, to preserve organic matter and biodiversity.
High trellising and the integration of fruit trees in the rows helps to protect the vine from global warming.
The whites are pressed without scratches put directly in stainless steel tank and the vinification of the reds is made in whole bunches and strided at the feet; everything is raised for 8 months in the best oak barrels of the forest of Tronçais.
